How to Prepare Kalburabasti Dough?
First of all, in a bowl, pour the butter, oil, yogurt, egg, semolina, salt, vanilla sugar, baking powder, and finally the flour, little by little. After, mix everything to obtain a homogeneous paste, which does not stick to the hands and which holds well.
To form the kalburabasti, take a doughnut and equip yourself with a grater. What you can also use is a sieve or colander. The crucial point is to get these little bumps on top of the dessert you are supposed to cook!
How Can You Form the Dough?
Place the doughnut on the grater and press well and flatten by hand. Then, put a little nut in the center. Afterward, roll the dough gently. Thus, you’ll get a cookie in a good shape. And small bumps on the top of the dessert give Kalburabasti dessert its characteristic.
What About Cooking Steps?
For advanced cooking, you had better place the dough on a baking sheet. You must, by the way, cover it with baking paper and do the same with the rest of the dough.
When all the desserts (tatlı in Turkish) have their form, bake them in an oven previously heated to 180°. You should maintain this process until the cookies are golden brown, which takes at least 30 minutes.
So, you have to cook desserts afterward. Later on, you must allow them to cool and in the meantime, you need to prepare the syrup. Well, for doing so, in a saucepan, pour the water and the powdered sugar, put to cook over medium heat, stirring constantly, until the syrup boils.
After the mixture boils, it is now time to pour the lemon juice, lower the heat and cook in small broths for about 20 minutes.

Well, we have come to the final point. You should place the cookies in a mold with little space between each. Then, over the cold cookies, you need to pour the hot syrup. After that step, pour the syrup by using a ladle. While doing so, be careful and pour the syrup little by little over each cookie.
It would be quite wise not to pour all the syrup at once and let it absorb a little. Later on, turn the cookies over so that they absorb the syrup well on all sides. The key point for a delicious Kalburabasti dessert is the fact that all the cookies are well soaked. You don’t have to use all syrup anyways there might be some of it unused.
Finally, you need to leave the dessert aside for a few hours. Thus, the dessert absorbs the syrup well enough. So, what does go well with the delicious dessert? The answer is not going to surprise you: a glass of Turkish tea, for sure!
